Healthy NATURAL ramen!

My FAVORITE food is RAMEN! I make it CONSTANTLY. I sometimes grab a couple bowls from my local asian market. But handmade noodles, or just whatever asian noodles you can find will do fine.
SIX ingredients this time:
ASIAN noodles
BONE IN chicken
squash
eggplant
FRESH lemon
Veggie stock (I know...homemade...but I like to cheat sometimes)

Get yourself a nice big pot, fill it with water, and turn the heat up to high
Rinse your chicken, and then drop it in the pot
Slice up your veggies, and set them aside
Place the amount of noodles you want per person into each individuals bowl
When your chicken is done boiling(I KNOW it sounds gross, but don't worry, we're NOT done yet), carefully pull it out, and remove the bones
DO NOT THROW THEM AWAY!
Place the bones BACK INTO THE WATER
Add the veggie stock (just one cube or a teaspoon will do)
Place the chicken into a pan on medium heat
After it starts to sizzle,  add the veggies
ZEST the lemon into the pan(squeeze a little juice in if you like)
While the chicken and veggies continue to fry, ladle the stock over the noodles
Place the chicken and veggies on top of the noodles
Wait three minutes, and ENJOY!
